What is the best way to cook Lobster tails? My husband bought them ,and they have been sitting in my freezer?

Frozen lobsters are not so yummy, they loose flavor and texture so i would recommend tossing them in a sauce after you steam them as per the directions from the lobster-man.





Tarragon Cream sauce


I pint heavy cream


4 tbs fresh tarragon or mild fresh herb of choice


1/4 cup dry white wine


1 clove minced garlic


2 tbs butter divided


salt to taste





SOFTEN the garlic in a saucepan in 1 tbs of butter, turn up heat and add the wine. reduce till syrupy, Add the herbs and cream allow to slowly reduce by at least half, till it looks thick . First, thaw them overnight in the fridge or under cold water (important!!) Boil water, place a strainer over the pan (do not submerge the lobster), and cook 4-5 minutes a pound. Best thing to do is to let them thaw out in your refrigerator....then split them down the middle lengthwise (cut through the top shell)


at this point you can either steam(not boil) or broil them directly....I usually mince up 2 cloves of garlic and mix with 3 tbsp melted butter and broil until the meat is white but still springy to the touch.

If we are talking tails only, defrost and steam till tender , DO NOT OVER COOK THEY WILL BE TOUGHER THAN LEATHER.


the meat should be white and tender. you can also split them and broil them. this might be the easiest for you as you can watch them cook , bast with a little butter when finished.


If we and talking whole lobsters , an inch or two of water in a pot , bring to a boil , put lobster into pot with the tail tucked under, steam 7 minutes a pound once the water is back to a boil. If cooking more than one at a time put the largest lobster in first and smallest last , add 4 minutes cooking time for each pound of weight of the extra lobsters. So if you have a 2pounder (14 minutes) and a 1 pounder, your cooking time is 18 minutes total .When time is up dump into the sink and spray with cold water briefly to stop the cooking action. Whole lobsters are easier to cook

I think you boil them. You can also steam them. Try adding butter to the water and some garlic. I would start by boiling because there frozen, then steam. Happy lobster cooking. Let us know how it turns out.
From what I hear, they have to be boiled no matter what. Another good way to cook them is to barbecue them AFTER boiling them. A lot of people tell me that barbecued lobster tails taste good, though I've never tried it myself.
I think you want to start by thawing and then par-boiling or briefly steaming the tails for 2 - 3 minutes.





In the carribbean they make a mango, butter and spice mix that they then coat the tails with and grill for 5 - 7 minutes. It's quite good.
